Fall Comfort Food: Taco Chicken

Alright, here we go with another one of my favorite recipes.  This one came from my friend, Kimberly Cipkowski. Super easy!!  Get your crockpot out for this one.

5-6 frozen chicken breasts
1 packet of taco seasoning mix
1/2 can of chicken broth

Put the frozen chicken in the crockpot and pour in the chicken broth.  Sprinkle the taco seasoning mixture over the top of the chicken (no mixing needed). Turn the crockpot on low for 7-8 hours. After 7-8 hours take two forks and shred the chicken. Stir it around in the broth and let it sit for another hour. That's it!  Easy and yummy!!  Add your favorite taco toppings to your table and it's an easy fall meal.

We also use the chicken for the following:
- taco salads
- taco soup
- chicken enchiladas

Enjoy!!!  Also, feel free to email me some of your favorite fall recipes and I'll post them as we go....we can all learn from each other.
